Why use BBQ wood chunks?

Wood chunks are great for longer lasting cooks. This makes them perfect for low 'n' slow cuts such as Brisket, larger joints of meat, whole chickens etc. They are also great value as a little goes a long way. One to two fist sized chunks is usually plenty.
